About Ashihana

Ashihana is located next to Hirayama Ikuo Silk Road Museum. Master painter Ikuo Hirayama gave our restaurant its name, which is written with three kanji characters (亜絲花). A is for Asia, shi represents the Silk Road, and hana comes from chaykhana, the tea houses in Eastern Europe where people enjoy meeting up.

Chef Kazunori Waragaya

Kazunori Waragaya was born in 1980. He was raised leading a self-sufficient lifestyle at his family home in Fukushima. Gathering wild edible plants and mushrooms in the mountains with his family, and turning them into meals, was part of his everyday life. He went on to train for ten years at Chez Azuma under French cuisine master Chef Keiji Azuma. After studying regional cuisine in Brittany and Lyon, and gaining experience in Tokyo as a chef at Ginza’s Bouchon d’Or and other restaurants, he moved to Yatsugatake in 2017. He enjoys spending his days surrounded by nature here, searching for mushrooms in the mountains.
